Anyone ever attempted the Gordon Ramsay Beef Wellington?

We made them for Christmas a couple of times the wife and I really liked them they were easy to make. Unfortunately the mushrooms in the paste around the beef was a big no for some so we just do Prime Rib now.

Im wondering if there's a substitute

Might make two, one with the mushrooms, and one with another layer

I done it a couple years ago for Christmas and it looks beautiful but truthfully we like a smoked prime rib better.

Did it 2 years ago and doing it again this year. It wasn't really that hard and came out great. Found the chestnuts at Whole Foods.
