I sprinkled some on grilled redfish. The fruitiness of the habanero paired extremely well with lemon. I use the spice the same as I would with cayenne, just with a little more moderation. The stuff is scary spicy.

jalapeno, cayenne, cubanelle (very mild), cascabel, shishito, poblano and whatever else I can find this spring. I usually have a ton of jalapeno so put them on the smoker and make my own chipotle. Grind down the smoked peppers to a powder.
