Alligator recipes...

Recently, I was asked to cook alligator for our church’s Wild Game Night. I’m well known as a good catfish cooker but I have never cooked alligator. Please help.

And depending on whether the alligator is wild for farm-raised I would fry a bunch of it also.

If you can fry catfish, you can fry gator. 1 inch cubes are your friend. Have a tasty sauce to dip them in.

When I think of courtbouillion, I think of tender fish, gently cooked. Not chewy alligator.
Maybe you could try grinding it and making fried croquettes/boulettes (like shrimp boulettes, which are made w ground shrimp and potatoes).
