I've done some large GIFs using frame by frame editing through GIMP... i.e. my auburn vs. lsu fark, but never anything that included sound.

If I wanted to take a small video and crop in two guy's heads what would be my best course of action? keep in mind that it would be a learning experience for me. I will need to get the video off of Youtube which I'm certain I can figure out on my own. FYI I have CS2 but have never used it, will I need other software?

Even if you guys can just point me in the right direction I would appreciate it

I don't think CS2 had anything that will help you. So, yes, you will need other software. I have used Vegas and some of the AVS tools. You can get what you need done with either of those.

I have never used any freeware/open source tools, but I know there are a few like Avidemux.

I know you could also do your work in ImageReady and export to a video file (with no 256 color limit) instead of saving to GIF. Then you could pull that video file into a Vegas, AVS, etc and do the audio part. I don't know if GIMP lets you export to video.

Let me know if you need more info and I can fill in the blanks for what I know/have done.

This snippet is from within GIMP. I've never fooled with it, but it looks to me like it may work for you, and its free I'm sure there are some Youtube tutorials to help you figure it out.
