Carribean or Mexcio Honeymoon suggestions for 1st-2nd week of April

The title says it but we're looking for honeymoon travel this April 5th for approximately 7-10 days.

We were originally thinking the Excellence in Playa Mujeras (not sure on spelling) but we waited too long to book and the nicer rooms and honeymoon suite are all booked up.

We've thought about some of the Sandal Resorts but just don't know if we think they're what they say they are? I've heard from some that the nightlife is nonexistent? and that you can get bored. any Sandals reviews would be great

We're in our late 30's, will spend most of our time at resort but will like to go on an excursion or two and would like to have some sort of nightlife and crowd around our age.
A nice spa is also a want and adults only. Top Shelf Drinks, food, and service. Not against older places but would prefer newer.
Assuming the things most people want: beautiful beaches, water, pools with swimup bars, swim up pools to room, nice rooms, etc.

Any suggestions would be greatly appreciated.
