Cooking gator for first timer

I'm planning on sauteing gator. Anyone have any tips on how long to cook for? Or what color cooked gator looks like?

what you mean sautéing? your not making a sauce picante?

Cooked sautéed gator will not appear too differently compared to chopped thighs and breasts of chicken meat would for a fact including blackened.
