When we were kids, my dad used to cook a huge gumbo and jambalaya every year on Mardi Gras day at a friends printing shop right on Vets, just before the first turn (Severne maybe or Causeway?- been a long time since we've lived there).
Anyway, people from the North would always come over to us and ask us to buy some of what we were cooking, and obviously, dad would alwyas just them some.
They'd ask what kind of gumbo it was, and dad would tell'em chicken and andouille. When they asked "what's an andouille?", dad would tell them it was the meaning animal in the swamp. He'd tell them it had a head on both ends.....that's what made it so mean, cause it was permanently constipated.
