He's the best DT in the draft right? He doesn't have to play 40 snaps a game to still be that. He can play 25 a game his first year, then if the team believes they can keep him motivated and he will easily drop 20-30 lbs in one offseason plan

A player can limit his pre-draft workouts, but he can’t skip them all unless he wants his draft stick to tumble.

It’s not uncommon for projected high picks to skip certain combine drills, but they almost always conduct a more comprehensive workout at their school’s Pro Day, unless they are injured.
