When offenses see Cover 2, it is very common for them to check to a run because of the safety that's NOT in the box.
The way you prevent the big runs like you're talking about is to tackle better.

Go back and watch the last two games. Every big play the safety was up. UCLA hit the crosser to the TE and yesterday the big run off tackle. The safety is in no mans land if they are back they can slow the play down until back side pursuit comes. It’s man to man with safety over the top.
