Had one for years. Loved it for small lakes. Even won a few fruit jar tournaments out of it.

I'm not sure how much storage folks need, maybe people just bring too much crap on their boat.

I agree. I have storage under my front deck. I store the following in there:
spare prop
dry bag with wipes, first aid, sunscreen, etc.
plastic ammo can with tools, spare fuses, electrical tape, etc.
three life jackets.

My hull came from the factory with no middle bench, so in the middle of the floor is typically my tackle bag and cooler. Rods go in rod holders mounted to both sides of the hull. I use $15 Academy camo hunting chairs for the seats so they can literally be put anywhere you would like to sit to fish.

-Cooler.
-Milk crate for loose items (sunscreen, tackle boxes, sandwich, one-hitter, etc) .
-Paddle for emergency, I have the collapsible telescopic kind that don't take much space.
-Two, maybe three rods if I'm feeling feisty.
-Tiller motors so a console doesn't take up so much space.
-Life jackets are stowed up under the front deck with anchor.
-Frabill Flow-Troll minnow/shrimp bucket I keep in the water when not underway.
its funny how pot heads have to let you know they smoke pot.
