You can (or at least you could) still buy MS Office 2019 and install it on your computer. You won't get all of the performance and feature updates, but it will work and isn't cloud based. You just have to make sure you have enough hard drive space.
Use Outlook that comes Office 2019 for email and have your ISP mail set up as a POP account as opposed to IMAP. That way when you open Outlook, it downloads the mail from the ISP mail server to your local machine and removes it from the server. Outlook also gives you a built in calendar.
Buy multiple external hard drives and back up daily, switch them out and keep them off site so you always have a current backup offsite in case you lose your IT assets due to fire/flood/theft.
Accounting software would be a bit harder. Quicken/Quickbooks is all subscription-based now I believe. There may be some other options that I don't know about that are still purchase/install the old fashioned way.

You’ve described my current email / calendar / Quickbooks situation
What caused my meltdown is that other “cloud” subscription software has rapidly stopped accommodation of MS outlook without the 360.
It is a monumental pain in the arse.
This subscription model is fricking highway robbery. I don’t need to have my software “upgraded” every week. frick that. Plus. I just do not trust storing my own thoughts and mental impressions in a place where the government may or may not periodically access it without my knowledge from time to time. And no way that shite isn’t happening bc BOFA just decided to search all its customers to figure out who went to Washington DC on January 6.
I further refuse to lease a cell phone. So I just buy one outright so I don’t have to turn it back in. They just keep jacking up the prices on the stupid things so that I guess eventually it will be cost prohibitive- but I’m not there yet.
I just do not trust Big Tech. At all. frick them. The leftists have outsourced their tyranny to them.
I’ve said it before and I’ll say it again. . . The only thing Orwell didn’t predict - was that Big Brother would take over without force.
