I'd go dimmable and match the kelvins to whatever the rest of your kitchen lighting is. If not, go adjustable but make sure they can hit true white.

How are you planning to wire them being on opposite walls?

I'm taking out a 3 ft wall section on that opposite side which contains light switches. When I relocate the switches, I can power the LEDs from a switch controlling that side.

Renovating from floor to ceiling and it's the best time to plan the electrical work. I thought replacing fluorescent ceiling fixtures with spot LEDs and under cabinet LEDs would be the way to go.
