Did he really rip them off?

Oh yeah. The royalties that he fricked them out of would have added up to billions by now.
He essentially did what Mark Zuckerberg did to Eduardo Severin in The Social Network. Kroc totally fricked the McDonald Brothers by cutting them out of all future royalties from the company and paying them off with what he knew would be a miniscule couple of million bucks for basically full ownership and control over McDonald's going forward.
He could have even cut them in on just 1% or 1/2% royalties (after all, they invented the entire restaurant) but he was such an arse that he wouldn't allow even a small portion of the future to go to the brothers. I think thats all they really even wanted, but Kroc wouldn't allow it.
After they realized how much they got screwed it was too late. They had already let the wolf into the henhouse.
The brothers even tried to start another burger joint, butz for whatever reason they just failed while Kroc literally took their last name and became a multi millionaire off of it.

Kroc ran ops. In the course of doing so, he opened a second business. The second business bought the land that each new restaurant was built upon. The second business leased back the spot to McDonalds. At some point he actually owned every piece of land or almost every piece. He threatened to shut them down unless they sold him controlling interest. Once they did that, it was game over.
