My wife had a conference in Denver and we stayed there for three days before we added on a vacation after in the mountains.
After one day we were so bored in Downtown Denver.
You do have the US Mint and we took in a Rockies game.
We stayed in Estes Park and Boulder wouldn't be a bad option either and it's not far from Denver at all.

Stay in Boulder and ski eldora maybe. We are gonna try out Ski Cooper in Leadville, CO for the weekend of valentines day.
