2nd this. I've never been able to grill them without them turning into shoe leather. Fried and smothered is also my favorite.

Overcooking them. Similar thing to duck and venison. Gotta be careful for sure. But any meat that’s like shoe leather is generally just over cooked and by a lot. Now, it’s certainly not chicken breast either, I mean I’m not saying it’s tender to start. But I don’t think it’s that far from frog legs or a chicken wing or something similar as far as texture. Given that, I like to eat meat off a bone so it doesn’t bother me either.
Now I’m not saying everyone is missing out by not grilling by any means, probably better ways to cook squirrel. But I do think it’s a pretty bland meat that has a lot more potential options then the normal 3-4 methods.
