He has a good setup so you are good on accessories already.
Pork butt is a good shout. I cook one every other week and eat it for lunch throughout the week.
I’d also recommend pork ribs and reverse seared steak.

Butts, hams, burgers, wings, London broil, sausages...like others have said, cook several things on it for the next few days.
