I smoke everything at 225.

Did my first one today at 250. Around a 14-15lb brisket and it cooked to 203-204 in only 7.5 hours. Let it rest wrapped in chest for 5 hours and it came out dry (especially the flat). Point was semi-moist. Have some more experimenting to do.
