Skinning and quartering a cow is easy. Did one in college, threw the quarters in the deep freeze, and cut steaks off as needed with a hack saw we kept by the freezer. The cow was free. If you've skinned and quartered a deer, beef is no different.

Buy a fat angus calf and do it yourself.
