There are traditional things the kids and wife like to do. They always want to ride certain rides and see certain shows. Going every three years also allows us to see the new rides and shows, and try out new dining places, etc.
Going one weekend a year, is usually very focused. For example, in 2018 we went to the Halloween party, which provides different experiences. We flew in Fri morning, did the party Friday night, then Sat we did Blizzard Beach, Sat night went to Disney Springs, and flew home on Sunday.
When we go for 5 days in November 2020, we will hit each park for a day, then hop around on the last day.
Personally, I would be fine going every 5-6 years. But I also like seeing my kids and wife happy, and this makes them happy.
