it seems you're leaving out some dialogue from that scene

All right….by the cut of your suit you went to Oxford or wherever and actually think human beings dress like that. But you wear it with such disdain, that my guess is you didn’t come from money and all your school chums rubbed that in your face every day, which means you were at that school by the grace of someone else’s charity, hence the chip on your shoulder. And since your first thought about me ran to orphan, that what I’d say you are.

Oh you are. And it makes sense since MI6 looks for maladjusted young men who’d give little thought to sacrificing others in others to protect queen and country. You know former SAS types with easy smiles and expensive watches. Rolex?

Vesper also denies Bond money after he tries seducing her in the middle of the poker game, saves Bonds life three times, back stabs him, and sacrifices herself for him.

You also leave out some important dialogue, where Bond perfectly reads Vesper by calling her out on her fashion, her demeanor, and also correctly surmises that she is an orphan. While the two are definitely getting personal with their attacks against the other, you can tell from the scene that they are both attracted to one another. This is reinforced several scenes later when Bond is astonished that the suit Vesper ordered for him was tailored, to which Vesper replies:

Vesper: I sized you up the moment we met.

She wants the D but is forcing Bond to earn it.

There's a reason why I consider Eva Green's Vesper to be the best Bond Girl to date. She was the most realistic and best fleshed out. When you see how their relationship ended, it's easy to understand why Bond never let another woman as close to his heart as Vesper managed to get.
