From your comment about not being the adventure types and interest in the Bahamas, I think Nice and Monaco are where you want to go. It's the French Riviera.
Now, May isn't warm enough for the water, but the beaches are still beautiful and the weather is still nice to enjoy the promenades. If you like museums, they have that. Renoirs home is now a museum there. If you like beaches, they have that. If you enjoy boats, they have the harbor. Castles, cathedrals, gardens, monestary, cemeteries all offer unique architecture if that's your thing.

In Monaco right down the road, you have the famous Casino Monte Carlo which should be a must do even if you don't care to gamble, like me. More of the same gardens, beaches, cathedrals, etc like Nice.

If you want to get into the water, I'd go to Maui in May.
