You’re just stupid if you want to sit there and make a large amount of roux for a huge pot of gumbo. Thousand percent better off using jar roux and spending other time cutting up fresh trinity , precooking okra, making stock, than stirring together flour and oil for an hour when the shite in the jar is the same and works just as well.
