I've been saying I'll build one for a few years now and from what I gather you just need a place for the fire, a box with reasonable insulating ability, a way to throttle air in and out, and a bit of a pitch to the roof so moisture doesn't condense and drip straight back down on the meat. Can get as fancy or basic with it as you want beyond that.

I had several sets of plans saved on my old computer. I want to say they were published by LSU - I probably got the link off this site.
