I have a natural gas pit that I use when I just want to straight grill something convenient and quick.
I really like slow smoking briskets and Boston butts (currently use an electric smoker for that) and I love the smoke tower in my father in law suit off set, to cold smoke cheese, smoke sausage and jerky.

For cold smoking I'd look at a cabinet style. If you don't want to have to put a log on the fire every 30-60 minutes and are used to set it and forget it types I'd definitely try a cabinet smoker first. I love offsets but they are definitely not for everyone.
There are a lot of builders, Stumps, Humphreys, Assassin, Lonestar Grillz. Maybe check those out, all depends on what your budget is.
