We did a plaster finish on ours and it is smooth as it can be. It's only a year old so I can't speak to the longevity of it.
We have travertine coping & decking, we liked the modern look vs. brick. The travertine doesn't get hot at all. My parents have an old school concrete deck and it gets hot as hell in the summer. I don't know anything about Cool Deck.
