Despite the fact that in most offices you will not be able to just go in and look around, I would be very careful doing this.

I've been to job interviews that were 100% suit and tie interviews where the employees or sometimes even the interviewer were dressed casually. Once I was told it was casual Friday. Another time it wasn't mentioned at all but I could see everyone dressed casually. So I wouldn't base your decision on what to wear off of what you see around the office.
