There’s a way to keep the slime factor down. After you cook it down the first time, you can squeeze it through some cheese cloth and that cuts down on the sliminess. Then just add it back to the pan/pot. It won’t lose flavor. Just slime.

In my opinion, when you smother okra, you are cooking it long past the slime factor. Or maybe it's the acid in the tomatoes, or both.

ETA: And y'all have given me such an envie, I'll probably be cooking some today!
