I remember reading the Thrawn trilogy freshmen year in college. Great books, loved the new characters. IMO, none of the new stuff is that great. I would not recommend any of it. Stick to legends - alot of weird cool stuff happened in those, because the authors were not restricted by the a new trilogy!

The Dark Empire comic book anthologies are also good.
I enjoyed the Tales series (Bounty Hunters, Jabba's Place, Mos Eisley Cantina) because they were short story collections about the different characters seen in the movies. They're not to everyone's taste, though.
Apparently there's also Empire and New Republic versions, which are newer than the others.

While the Thrawn trilogy is the best of the EU books I've read, the best stories and world building I've come across in the EU (by far) are in the KOTOR 1 and 2 videogames. It's a shame those weren't made into films.

Probably not a popular opinion on this board, but I found all EU stuff I've read to be weaksauce. Just bad writing all around.
