Meat isn't an issue, just spinal bones and soft tissue. If you kill a deer that you intend to mount you need to cape it out like a taxidermist would and cut the horns off leaving them attached to the skull plate. Peal the membrane off of the inside and clean it with water. You shouldn't have any problems doing this, other than it's a pain to cape it off the skull correctly. I recommend a set or razor blades and a screwdriver to assist.

Everyone suggesting the "don't speed and you'll be ok" thing really needs to take a step back and think about what you are suggesting.

You can quarter the meat and being it back just fine.

If you shoot a buck, cape it out, cut off the skull plate and clean it thoroughly. If you want to do a Euro mount, either have someone there do it or bring your own pot to boil it in.

There are places in Texas with CWD, it is not a joking matter or just an inconvenience for you. Take a little time, do the right thing.

This. As a retired taxidermist, I suggest that you take a few critical measurements that your taxidermist will need before you cape out your deer and remove the skull plate and horns.
