It was tenderizing the meat. I think it could kill pretty much when it wanted to, but the fear fed the cosmic aspect of the monster. That's why it also targeted kids since adults are afraid of more abstract things like economic failure whereas kids fears could be physically manifested more easily.
Though I still would have been scared shitless if I had seen any of those things.

Also I never noticed this before but when Henry carved the H on Ben's chest, he kind of overextended the cut on the right side. H=It
