I always thought Winter Park was the best place to learn to ski. Have you looked into that ? The drive there is pretty great too.
I liked Copper , Vail and Keystone the best . Copper was my go-to for all the years I lived in Colorado.

The ski school at WP is my fav out of all the ones I've put my kids into. Cost was cheaper but I also felt they challenged them more to improve and they didn't just keep them at the bottom all day. My 4 year olds first ever day they had him on the lift going up to another beginner area which made it more enjoyable for him.
