Parmesan reggiano.
It's not just my #1 favorite cheese...it's probably top 3 favorite foods.
My wife and I plan on visiting Italy one day, and I will not go unless we have the money to be part of the first cracking of a parmesan cheese wheel and sampling it fresh at the factory.

Having done that I can absolutely assure you that it is worth every penny. One of my all time favorite experiences.
