Sounds like I've pretty much been on track.

I use butter to fry my eggs, usually olive oil to pan fry my trout...

but I floured/egged some trout tonight, so I used veg oil on med-hi heat. I was wishing it was crispier, so I'm thinking I should've cooked it a little hotter.

I guess my "intuitive" selection was just from watching other people. Had never really thought about the science.
