Sedona is usually a good 10-15 degrees cooler than PHX metro area. I've gone to Sedona several times during the summer and still enjoyed it. Just have to plan when you do your outdoor activities.
Or...go to Flagstaff instead to truly escape the heat. Remember...Flag is not far from Sedona at all (like 40-45 minutes away). Highs usually in the upper 70s in the summertime with lows in the 50s at night. We've camped there during the summer and needed light jackets when it got dark.
