Anyone have a good recipe they have tried or any tips?

It can't be very hard to make other than finding fresh ingredients, and only having Rouses as a source for the fish.

Just go to Southern Fin Poké and watch them make it.

Yellowfin tuna cubed
Toss with a little bit of sea salt and put into the fridge for a couple hours to firm up.
Mix equal parts ponzu and sambal (red garlic chile paste)
Add a few drops of sesame oil and mix
Get the fish back out and fold in the dressing
Finely chop scallions, ogo (pickled red seaweed) and mix in with some sesame seeds.
Fold that into the mixture and Voila! Poke!

Decided to just make one without a recipe and I kinda surprised myself.

Here are the ingredients:

1/2 pound of Tuna
1 small avocado sliced
1 scallion diced
Small amount of sliced Vidalia onion
1/4 cucumber sliced
Soy sauce to taste
Rice wine vinegar to taste
Juice of 1/2 lemon
Sesame seeds to taste
Sriracha to taste
1 cup cooked cold sushi rice

I marinated the fish with the liquids for about 20 minutes then combined everything.
