Is it worth the headache? Depends on the crowd yall expect, if his cowokers are cool and fun, I would boil them.
If 70 people are coming, 300 pounds is too much, I would settle in around 240 pounds. That is 8 sacks or so. I wouldnt see any problem at all running 8 sacks thru three pots in an afternoon.
Catered on site will cost your about 400 extra, you could put that to buying one of those cool stainless rigs that runs two sacks at a time.
