i was at maxwells last night getting some chops.

One of the guys working there apparently does the salty dog method for boiling crawfish. I have never heard of this method but apparently its some of the best crawfish around.

The gist from what i gathered is he makes his own seasoning then he boils them in seasoned water. Then puts them in the cooler and "salty dogs" them down with his seasoning until it evaporates off the shells.

Yah this is what Lafayette and most of the Acadiana region do. Its steaming them instead of soaking them. There's a rather large debate on which one is correct, but I'm team soak.

Last year I tried soaking for 25 and then steaming (and shaking more seasoning on them) for an extra 15. Came out good, but not really worth it
