Otis, do you personally add 2 cups of the Zatarain liquid or is that going to be too spicy? You are one of the main reasons I want to try this Chackbay out. I've seen where you posted Chackbay numerous times is the way to go. I did a search on here though and there was a debate on how much liquid Zatarains to add. A couple of guys said add one small bottle and cayenne. I just don't want to screw up a $75 sack of crawfish.

2 cup in 35 quarts of water will not be too much. Add 1 box of salt, seasonings, and heat the water. Taste. Add the other box if you like...I always use 2 boxes for the first sack.
Chackbay has very little salt compared to most products. It has the Chinese red pepper, which is a flavor I really like.
