The only unforgivable to me is overcooked and mushy. Never had that from a friends boil. Have had it several times at restaurants.

That's from restaurants reheating what they didn't sell the day before. Almost impossible to have mushy crawfish fresh out of the pot.
ETA: Its not totally impossible, but anyone that is cooking in a restaurant should be able to avoid it on a freshly boiled pot.
