If you are limited to New Orleans cruises, I'd go with the Carnival Dream.
Another option would be to hop on a "Wanna Get Away" flight with Southwest airlines from New Orleans to Fort Lauderdale airport. This is only a couple hundred extra bucks. From there you can look at cruises out of Miami and Ft. Lauderdale. This area seems to attract the newest largest ships. We just did this in November and went on the Norwegian Escape and loved it.
Also, leaving out of Florida gives you options to much nicer destinations in my opinion.
