You talking about 5 gallon jambalaya pot? Never did beans in it? Is it easy?

Yeah. You just have to stir every now and then and add liquid if it gets too thick to make sure it doesn't stick and burn.

5 lbs of white beans, boil them for half and hour, strain and wash them good, set aside

5 large opinions, sauté in oil
3 lbs of ham ends cut into small dives, add to pot
Add beans back with a lot of water, boil and reduce to simmer, keep cooking until beans are soft and the sauce is creamy, add more liquid as needed. Probably 2-3 hours.

Season at the end with salt, white pepper, hot sauce, garlic powder. Don't add salt until beans are really soft.

Right before serving, chop a few bunches of green onions and stir in.
