If you are willing to spend $1K, Browning Hi-power is the 9mm classic - all blued steel, hammer fired, single action, safety. Heirloom pistol.

The finish is rough, but since it's an all-steel gun, you can get it refinished as you like. I've seen some that are absolutely stunning.
BTW, since the CZ 75 is also steel, you can refinish these too.
