As posted above, Grand Canyon would be a good trip. Not sure the easiest way to get to I-40 from BTR, but once there it is a straight shot. Albuquerque is a cool town. Once you get into Arizona there is Painted Desert/Petrified Forest and Meteor Crater both on the way. If you are an Eagles fan you can go to Winslow and check out the Standing On A Corner statue.
You could also take 55 north to St. Louis and then go west out 70 to Denver. That will open up a ton of possibilities. Rocky Mountain National Park is not too far north on 25 or keep going west on 70 into Utah and hit Arches/Canyonlands and even keep going to Bryce/Zion.
Biggest limiting factor is going to be time. You would need a good 2-3 weeks to do the Utah trip the right way.
