I wasn't trying to be scientific in rebutting what someone else said. I try to adhere the low-ish carb diet and wanted to keep the conversation going in hopes for some ideas I haven't thought of and the water weight comment was shite for this thread.

I agree with you, starches and processed foods are what we try to avoid. We actually have half a sweet potato baked served like a traditional baked potato once or twice a week. My line of thinking is that 3rd place on your plate is usually doing you more harm than good because it's potatoes, mac and cheese, pasta, or something like that and eliminating it is an easy way to significantly reduce your caloric intake.

I am a high carb person but get them from natural sources, including starches.

When I do eat low carb some of my favorites are :
Grilled chicken spinach salad (throw avocado in there sometimes)
Steak and Eggs
zucchini noodles with chicken, avocado, and cherry tomato's
Spaghetti Squash with ground beef/turkey
Steak and Brussel sprouts/green beans

I use low sodium soy sauces with the squash and noodles with sirloin or something for Asian style dish.
