Fall off the bone is technically overcooked. You want ribs where you take a bite with little to no resistance with the meat staying on the bone. That is a perfectly cooked rib.

Now, I would much rather over my ribs overcooked (fall of the bone) than undercooked (tough and chewy). So if you were to error on the side of caution overcooked is the way to go I guess.

in a competition and sucks in real life.
