The biggest thing that I found was to go early then take a break around 2 or 3 and go back to the park that has magic hours that night and close it down. I had a five and nine year old that made the break a must. The cooler temperatures made the park so much nicer. Many people go all day and leave the park around 5 worn out. Watch the firework show early on your trip and then use that time the following days to do rides. The Snow White mine cart ride went from an 80 minute wait to 15 minute wait. The lines really let up at firework time.

This. Even if you do train rides, monorail, Hall of Presidents, getting off your feet during mid day chaos is nice. I build our park schedule around Extra Magic Hours and crowd calendar on FrogTours. Personally, FantasyLand is an absolute no fly zone for me from mid morning until fireworks - Peter Pan has wait times near 1.5 hours, no thanks. Kids aside, we head straight for the back of the park at open unless early EMH warrants FantasyLand - same approach at other parks.

PRO TIP: When scheduling your fastpass+ online, 30 days out (Offsite accommodations) or 60 days out (resort guest), keep in mind that Orlando is an hour ahead of Louisiana. This means you can schedule at 11:00 CDT, 10:00 Mountain, 9:00 Pacific...etc.
