Oh yeah, I would have made them beat defeat him narrowly in Age of Ultron but not ultimately. In the meantime Ultron willingly go into seclusion waiting for Thanos' arrival and laugh knowing he planted the seeds for the Avengers to destroy themselves, with millions dead because of what he's done.
Once Thanos arrives, Ultron would upload himself to Thanos' computers and build himself the true perfect body that is truly invincible. Thus make Infinity War Part 2 the Avengers vs Thanos vs Ultron. Would have been epic.
