Bluefish from the No. Atlantic are very good. I was in the seafood business in Rhode Island in the 70's. We would buy Blues from the recreational fisherman for 10 cents a pound (legal at the time). The main run was in the fall and some guys could catch 300/400 lbs. A lot of the schools offshore would be 15/20 lb. fish. Anyway we would freeze them whole ( head-on, guts-in). You could then thaw them when needed, fillet and we would sell the filets for $.99/lb.
