Can you explain this to me? Why wouldn't it be a touchback?

Because the batting takes place before the ball goes out, therefore the penalty took place before the touchback.

Illegal touching of the defense which means the turnover wouldn't count. Ball would be given back to the offense. 1st down at the .5 yard line

You can't bat the ball intentionally anywhere on the field after a fumble or onside kick etc.
