Blood On The Tracks is the most essential imo.
Shelter From The Storm contains many of the same songs but played electric with The Band.
Those two albums together show how different the same song can be. Bob Dylan took a lot of heat from the Folk community for plugging in.
He also took a ton of heat for making an "alt country" album, Nashville Skyline. But as soon as he did most other acts including The Rolling Stones soon followed suit.
Hwy 61 is a must.
